Instructions

  1. 1

Preheat your oven to 200 degrees Celsius. Toss the carrots with 15 ml of olive oil, 2 grams of salt, and 1 gram of pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.

  2. 2

Pat the chicken dry with a paper towel and season generously with 2 grams of salt and 1 gram of pepper on both sides.

  3. 3

Heat the remaining 15 ml of olive oil in a large oven-safe skillet over medium-high heat. Place the chicken skin-side down and sear for 6-8 minutes, until the skin is deeply golden and crisp.

  4. 4

Flip the chicken, reduce heat to medium, and continue to cook for another 8-10 minutes, or until cooked through.

  5. 5

Remove chicken from the skillet and set aside to rest. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.

  6. 6

Add the fresh spinach to the skillet, stirring until it wilts, about 2-3 minutes. Squeeze in the juice from half a lemon and season with the remaining 1 gram of salt and 1 gram of pepper.

  7. 7

To serve, arrange the pan-seared chicken, roasted carrots, and garlic spinach on plates. Garnish with fresh lemon slices.
