Ingredients
- •Pasta
- •Canned Tuna in oil
- •Mushrooms
- •Tomatoes
- •Pasta sauce
- •Olive oil
- •Salt
- •Black pepper
- •Optional: Dried basil for seasoning
- •Optional: Onion powder for flavor
Instructions
- 1
Preheat your oven to 200 degrees Celsius. Halve the tomatoes and place them cut-side up on a small baking tray. Drizzle with a little olive oil, season with salt and pepper. Roast for 20-25 minutes until softened and slightly caramelized.
- 2
While the tomatoes roast, bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente, approximately 8-10 minutes. Drain well, reserving about 60ml of pasta water.
- 3
Slice the mushrooms. Heat a tablespoon of olive oil in a large pan or skillet over medium-high heat. Add the sliced mushrooms and sauté until deeply golden brown and tender, about 7-9 minutes. Season with a pinch of salt and pepper.
- 4
Reduce the heat to medium. Add the pasta sauce, drained tuna, dried basil, and onion powder to the pan with the mushrooms. Stir well to combine.
- 5
Add the roasted tomatoes to the sauce, gently mashing a few with the back of a spoon to release their juices. Simmer for 3-5 minutes, allowing the flavors to meld. If the sauce is too thick, add a splash of the reserved pasta water.
- 6
Add the drained pasta to the pan with the sauce. Toss everything together until the pasta is thoroughly coated.
- 7
Serve immediately, perhaps with a final drizzle of olive oil and a grind of black pepper.
