Umami Glazed Chicken with Crispy Potato and Bell Pepper Medley

Ingredients

  • •1 pound boneless, skinless chicken thighs, cut into 1 inch pieces
  • •2 medium Yukon Gold potatoes, peeled and cut into 1 inch cubes
  • •1 large red bell pepper, seeded and cut into 1 inch pieces
  • •1 small yellow onion, chopped
  • •2 cloves garlic, minced
  • •1 inch fresh ginger, grated
  • •1/4 cup soy sauce
  • •1/4 cup mirin
  • •2 tablespoons sake
  • •1 tablespoon brown sugar, packed
  • •1 tablespoon sesame oil
  • •1 tablespoon cornstarch
  • •2 tablespoons water
  • •2 tablespoons vegetable oil, for cooking
  • •Optional: 2 tablespoons chopped green onions for garnish
  • •Optional: 1 teaspoon toasted sesame seeds for garnish

Instructions

  1. 1

In a small bowl, whisk together soy sauce, mirin, sake, brown sugar, sesame oil, cornstarch, and water until smooth to create the teriyaki glaze. Set aside.

  2. 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.

  3. 3

Add the remaining 1 tablespoon of vegetable oil to the same skillet. Add the cubed potatoes and cook, stirring occasionally, until golden brown and tender, about 10-12 minutes. You may need to reduce heat to medium.

  4. 4

Add the chopped yellow onion, red bell pepper, minced garlic, and grated ginger to the skillet with the potatoes. Sauté for 5-7 minutes, until the vegetables are tender-crisp and fragrant.

  5. 5

Return the cooked chicken to the skillet with the vegetables. Stir well to combine.

  6. 6

Give the prepared teriyaki glaze a quick whisk again, then pour it over the chicken and vegetables in the skillet. Bring to a simmer, stirring constantly, until the sauce thickens and coats the chicken and vegetables, about 2-3 minutes.

  7. 7

Remove from heat and transfer the dish to serving plates. Garnish with chopped green onions and toasted sesame seeds, if desired. Serve immediately.
