Ingredients
- •300 grams pork loin, cut into 1 cm thick medallions
- •400 grams ripe tomatoes, roughly chopped
- •15 ml olive oil
- •2 grams salt
- •1 gram black pepper
- •2 grams garlic powder
- •1 gram dried oregano
- •100 ml water
Instructions
- 1
Season the pork medallions generously on both sides with 1 gram of salt and 0.5 gram of black pepper.
- 2
Heat the olive oil in a medium sized, heavy bottomed pan or Dutch oven over medium high heat until shimmering.
- 3
Carefully place the seasoned pork medallions into the hot pan and sear for 2-3 minutes per side, until deeply golden brown. Remove the pork from the pan and set aside.
- 4
Add the chopped tomatoes to the same pan, stirring to scrape up any browned bits from the bottom. Cook for 5 minutes, stirring occasionally, until they begin to soften.
- 5
Stir in the remaining 1 gram of salt, 0.5 gram of black pepper, garlic powder, dried oregano, and water. Bring the mixture to a gentle simmer.
- 6
Return the seared pork medallions to the pan, nestling them into the tomato sauce. Reduce the heat to low, cover the pan, and simmer for 20-25 minutes, or until the pork is very tender and the sauce has slightly thickened.
- 7
Uncover the pan and increase the heat to medium low. Continue to simmer for another 5-10 minutes, stirring gently, to further reduce and concentrate the sauce.
- 8
Serve the tender pork medallions immediately, spooning the rich tomato sauce generously over each portion.
