Ingredients
- •2 chicken thighs, bone-in skin-on
- •1 large onion, roughly chopped
- •4 cloves garlic, thinly sliced
- •400 grams crushed tomatoes
- •2 tablespoons olive oil
- •1 teaspoon dried oregano
- •Salt to taste
- •Black pepper to taste
- •100 ml water
Instructions
- 1
Pat the chicken thighs dry with paper towels, then season generously with salt and black pepper.
- 2
Heat olive oil in a large, oven-safe skillet or Dutch oven over medium-high heat. Sear the chicken skin-side down for 8-10 minutes until the skin is deeply golden and crispy. Flip and sear for another 2-3 minutes.
- 3
Remove the chicken from the skillet and set aside. Add the chopped onion to the skillet, scraping up any browned bits, and cook for 5-7 minutes until softened and translucent.
- 4
Add the sliced garlic and dried oregano to the skillet, cooking for 1 minute until fragrant. Be careful not to burn the garlic.
- 5
Pour in the crushed tomatoes and water, stirring well. Bring the sauce to a gentle simmer, then return the seared chicken thighs to the skillet, nestling them into the sauce.
- 6
Reduce heat to low, cover the skillet, and simmer for 30-35 minutes, or until the chicken is cooked through and very tender. Alternatively, you can braise it in a preheated oven at 180 degrees Celsius for the same duration.
- 7
Taste the sauce and adjust seasoning with salt and pepper as needed. Serve the chicken hot, spooning plenty of the flavorful tomato and garlic sauce over each piece.
