Tuscan Herb Roasted Chicken with Lemon-Garlic Pan Sauce

Ingredients

  • •2 large boneless, skinless chicken breasts, about 8 ounces each
  • •1 tablespoon olive oil
  • •1 teaspoon fresh rosemary, finely chopped
  • •1 teaspoon fresh thyme, finely chopped
  • •2 cloves garlic, minced
  • •1/2 cup chicken broth
  • •2 tablespoons unsalted butter, cold and cut into cubes
  • •1 tablespoon fresh lemon juice
  • •Salt to taste
  • •Freshly ground black pepper to taste
  • •Optional: 1 tablespoon fresh parsley, chopped, for garnish

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit, 200 degrees Celsius. Pat the chicken breasts thoroughly dry with paper towels, then season generously on both sides with salt and black pepper.

  2. 2

Heat the olive oil in a large oven-safe skillet, preferably cast iron, over medium-high heat until shimmering. Carefully place the chicken breasts in the hot skillet and sear for 5-7 minutes per side, until deeply golden brown and a beautiful crust has formed.

  3. 3

Once seared, transfer the skillet with the chicken to the preheated oven. Roast for 10-15 minutes, or until an internal temperature of 165 degrees Fahrenheit, 74 degrees Celsius, is reached. Remove chicken from the skillet and let it rest on a cutting board, tented with foil, for at least 5 minutes.

  4. 4

While the chicken rests, return the skillet to medium heat on the stovetop. Add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan with a wooden spoon.

  5. 5

Bring the broth to a simmer and reduce slightly, about 2-3 minutes. Remove the skillet from the heat and whisk in the cold butter cubes, one at a time, until the sauce is emulsified and slightly thickened. Stir in the fresh lemon juice, chopped rosemary, and thyme.

  6. 6

Taste the sauce and adjust seasoning with salt and pepper if needed. Slice the rested chicken breasts against the grain, then arrange them on serving plates. Drizzle generously with the warm pan sauce.

  7. 7

Optional: Garnish with fresh chopped parsley before serving. Serve immediately with your favorite side dishes, such as roasted asparagus or creamy mashed potatoes.
