Instructions
- 1
Preheat a panini press or a large non-stick skillet over medium heat. If using a skillet, you'll need another heavy skillet or a brick wrapped in foil to press the sandwiches.
- 2
Brush one side of each slice of bread with olive oil.
- 3
On the unoiled side of two bread slices, layer half of the mozzarella, followed by half of the tomato slices, basil leaves, a pinch of salt, and pepper. Drizzle with 1 teaspoon of balsamic glaze.
- 4
Top with the remaining two slices of bread, oiled-side out.
- 5
Place the assembled paninis in the preheated panini press. Cook for 5-7 minutes, or until the bread is golden brown and crispy, and the cheese is melted and gooey. If using a skillet, place the paninis in the skillet, place the heavy skillet or brick on top, and cook for 3-4 minutes per side.
- 6
Remove the paninis from the press or skillet, slice in half if desired, and serve immediately.
