Heat 1 tbsp vegetable oil in a large saucepan over medium heat. Add the chicken and cook until browned (about 5 minutes). Transfer the chicken to a plate.

  3. 3

In the same saucepan, add another tbsp of vegetable oil. Sauté the potatoes and carrots for 3-4 minutes or until slightly tender.

Stir in the Thai red curry paste, allowing it to cook for 30 seconds. Add the coconut milk, chicken stock, lemongrass, fish sauce, and sugar.

  5. 5

Bring the mixture to a gentle simmer, cooking until the vegetables are tender and the flavors meld together (about 15-20 minutes).

  6. 6

Return the chicken to the saucepan, allowing it to warm through. Stir in the fresh basil leaves right before serving.

  7. 7

Serve the Thai red curry with steamed jasmine rice, garnished with additional fresh basil and lime wedges if desired.

Optional: Adjust the amount of curry paste to suit your desired level of spiciness.
