Instructions

  1. 1

Preheat your oven to 200 degrees Celsius. In a medium bowl, whisk together the mayonnaise, Tabasco sauce, sugar, salt, pepper, garlic powder, onion powder, and smoked paprika to create the glaze.

  2. 2

Pat the chicken pieces dry with paper towels. In a separate bowl, toss the chicken with 15ml of the prepared glaze, ensuring it is evenly coated.

  3. 3

Heat the vegetable oil in an oven-safe skillet over medium-high heat. Sear the chicken for 2-3 minutes per side until lightly browned.

  4. 4

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 74 degrees Celsius, basting once halfway through with a spoonful of the remaining glaze.

  5. 5

While the chicken bakes, gently warm the remaining glaze in a small saucepan over low heat, stirring occasionally until slightly thickened. Do not boil.

  6. 6

Once the chicken is cooked, remove it from the oven. Brush generously with the warm, thickened glaze, ensuring a beautiful, sticky coating.

  7. 7

Finely grind the graham crackers into a dust using a food processor or by hand. Sprinkle the graham cracker dust over the glazed chicken before serving.

  8. 8

Serve immediately, optionally with a few extra drops of Tabasco for those who desire more heat, allowing the sweet and spicy flavors to shine.
