Sticky Gochujang Glazed Roasted Chicken Thighs with Sesame

Ingredients

  • •8 bone-in, skin-on chicken thighs, about 2.5 pounds total
  • •1 tablespoon olive oil
  • •For the Gochujang Glaze:
  • •1/4 cup gochujang Korean chili paste
  • •1/4 cup soy sauce
  • •1/4 cup honey
  • •2 tablespoons rice vinegar
  • •1 tablespoon sesame oil
  • •3 cloves garlic, minced
  • •1 tablespoon fresh ginger, grated
  • •1 tablespoon sesame seeds
  • •2 green onions, thinly sliced for garnish
  • •Salt to taste
  • •Black pepper to taste
  • •Optional: Steamed rice for serving

Instructions

  1. 1

Preheat oven to 400 degrees Fahrenheit 200 degrees Celsius. Line a large baking sheet with parchment paper or foil for easy cleanup. Pat chicken thighs dry with paper towels and season lightly with salt and pepper.

  2. 2

In a medium bowl, whisk together the gochujang, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until well combined. This is your sticky glaze.

  3. 3

Arrange the chicken thighs skin-side up on the prepared baking sheet. Brush about half of the gochujang glaze evenly over the chicken thighs, ensuring good coverage on the skin.

  4. 4

Roast the chicken for 20 minutes. Remove from oven, brush the remaining glaze over the chicken, and return to the oven.

  5. 5

Continue roasting for another 15-20 minutes, or until the chicken is cooked through to an internal temperature of 175 degrees Fahrenheit 80 degrees Celsius and the skin is deeply caramelized and sticky. The glaze should be bubbling and slightly thickened.

  6. 6

Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving. This allows the juices to redistribute for maximum tenderness.

  7. 7

Garnish generously with sesame seeds and thinly sliced green onions. Serve hot, optionally with steamed rice to soak up the delicious extra glaze.
