Ingredients
- •2 medium potatoes, about 300g
- •1 large onion
- •3 cloves garlic
- •4 medium tomatoes
- •4 large eggs
- •3 tablespoons olive oil
- •1/2 teaspoon salt, plus more to taste
- •1/4 teaspoon black pepper, plus more to taste
- •1/4 teaspoon red pepper flakes (optional, for spice)
Instructions
- 1
Peel and dice the potatoes into 1cm cubes. Heat 1 tablespoon of olive oil in a large non-stick pan over medium-high heat. Add the potato cubes and cook, stirring occasionally, for 15-20 minutes until they are golden brown and crispy on all sides and tender inside. Season with a pinch of salt and pepper. Set aside.
- 2
While potatoes cook, finely chop the onion and mince the garlic cloves. Dice the tomatoes into 1cm pieces.
- 3
In a separate oven-safe skillet or a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook for 5-7 minutes until softened and translucent. Add the minced garlic and red pepper flakes (if using), and cook for another minute until fragrant.
- 4
Add the diced tomatoes to the pan. Stir well and bring to a gentle simmer. Cook for 10-12 minutes, stirring occasionally, until the tomatoes have broken down and the sauce has thickened slightly. Season the sauce with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- 5
Preheat your oven to 190 degrees Celsius (375 degrees Fahrenheit). Create four small wells in the tomato sauce using the back of a spoon. Carefully crack one egg into each well.
- 6
Transfer the skillet to the preheated oven and bake for 8-12 minutes, or until the egg whites are set but the yolks are still runny. Cooking time may vary based on your preferred egg doneness.
- 7
Carefully remove the skillet from the oven. Divide the crispy potato hash between two serving plates. Ladle two baked eggs with a generous amount of the spicy tomato sauce over the potatoes on each plate.
- 8
Serve immediately, allowing the rich tomato sauce and creamy egg yolks to mingle with the crispy potatoes for a truly satisfying experience.
