Instructions

  1. 1

In a small bowl, whisk together the soy sauce, fish sauce, sugar, and oyster sauce. Set aside.

  2. 2

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and chilies and stir-fry for 30 seconds until fragrant.

  3. 3

Add the sliced chicken to the wok and stir-fry for 3-4 minutes until cooked through and lightly browned.

  4. 4

Add the sliced onion and continue to stir-fry for 2-3 minutes until softened.

  5. 5

Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything and cook for 1 minute until the sauce thickens slightly.

  6. 6

Stir in the fresh Thai basil leaves and cook for another 30 seconds until just wilted. Remove from heat.

  7. 7

In a separate small non-stick pan, heat a splash of vegetable oil over medium heat. Fry the two eggs sunny-side up until the whites are set and the yolks are still runny, about 2-3 minutes per egg.

  8. 8

Serve the spicy Thai basil chicken immediately, topped with a fried egg, alongside steamed jasmine rice.
