Spicy Shrimp, Tofu, and Egg Scramble

Ingredients

  • •200 grams shrimp, peeled and deveined
  • •200 grams firm tofu, pressed and crumbled
  • •2 large eggs, beaten
  • •1 small onion, thinly sliced
  • •3 cloves garlic, minced
  • •1 large tomato, diced
  • •15 ml olive oil
  • •Salt to taste
  • •Black pepper to taste
  • •5 grams red pepper flakes (optional, for heat)
  • •Optional: Sliced green onions for garnish

Instructions

  1. 1

Heat olive oil in a large skillet or wok over medium-high heat.

  2. 2

Add sliced onion and minced garlic. Stir-fry for 1-2 minutes until fragrant.

  3. 3

Add the shrimp and cook for 2-3 minutes, until they turn pink and opaque. Remove shrimp from the pan and set aside.

  4. 4

Add the crumbled tofu to the pan. Stir-fry for 3-4 minutes, breaking up any large pieces, until lightly browned.

  5. 5

Pour the beaten eggs over the tofu. Scramble the eggs until just set, then gently mix them with the tofu.

  6. 6

Return the cooked shrimp to the pan. Add the diced tomato and red pepper flakes if using. Stir everything together for 1-2 minutes, just until the tomato is slightly softened.

  7. 7

Season with salt and black pepper to taste. Toss everything to combine.

  8. 8

Serve immediately, optionally garnished with sliced green onions for added freshness and color.

  9. 9

This dish is fantastic on its own or served with a side of plain rice for a complete meal.
