Instructions

  1. 1

Season the chicken pieces with salt, pepper, and 1 tbsp cornstarch.

  2. 2

Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the chicken and cook until browned (about 5 minutes). Transfer the chicken to a plate.

  3. 3

In the same skillet, add another tbsp of vegetable oil. Sauté the garlic, ginger, and chili peppers for 30 seconds until fragrant.

  4. 4

Add the carrots and potatoes, stir-frying for 3-4 minutes or until slightly tender.

  5. 5

In a small bowl, whisk together the chicken stock, soy sauce, mirin, rice vinegar, and remaining cornstarch. Pour the mixture over the vegetables and bring to a simmer.

  6. 6

Return the chicken to the skillet, allowing it to cook through and absorb the flavors (about 5 minutes).

  7. 7

Serve the spicy Japanese chicken stir-fry over steamed rice, garnished with chopped scallions if desired.

  8. 8

Optional: Adjust the amount of chili peppers to suit your desired level of spiciness.
