Instructions

  1. 1

Preheat your oven to 200 degrees Celsius. Toss the trimmed asparagus spears with 5ml olive oil, salt, and pepper on a baking sheet. Roast for 10-12 minutes, or until crisp-tender and slightly charred.

  2. 2

While asparagus roasts, bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Drain, reserving about 50ml of pasta water.

  3. 3

Pat the chicken breast dry and season generously with salt and black pepper. Heat 10ml olive oil in a large skillet over medium-high heat.

  4. 4

Add the chicken to the hot skillet and sear for 6-8 minutes per side, or until golden brown and cooked through. Remove chicken from skillet, let it rest for a few minutes, then slice into thin strips.

  5. 5

In the same skillet, add the minced garlic and sliced jalapenos. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

  6. 6

Stir in the red sauce and the reserved pasta water. Bring to a gentle simmer, then add the cooked pasta. Toss to coat evenly. Add chili flakes now if desired.

  7. 7

Divide the spicy pasta between two plates. Top with the sliced pan-seared chicken and arrange the roasted asparagus alongside.

  8. 8

Garnish with fresh green onions if using, and serve immediately.
