Spicy Gochujang Shrimp and Roasted Tomato Noodles

Ingredients

  • •1 pound large shrimp, peeled and deveined
  • •1 pint cherry tomatoes
  • •8 ounces ramen noodles or linguine
  • •2 tablespoons gochujang (Korean chili paste)
  • •2 tablespoons soy sauce
  • •1 tablespoon rice vinegar
  • •1 tablespoon honey or maple syrup
  • •1 tablespoon sesame oil
  • •4 cloves garlic, minced
  • •1 inch piece fresh ginger, grated
  • •2 tablespoons vegetable oil
  • •2 green onions, sliced for garnish
  • •1 teaspoon sesame seeds for garnish
  • •Salt and pepper to taste
  • •Optional: Fresh cilantro, chopped for garnish
  • •Optional: Lime wedges for serving

Instructions

  1. 1

Preheat oven to 400°F. Toss cherry tomatoes with 1 tablespoon vegetable oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes, or until softened and slightly blistered.

  2. 2

While tomatoes roast, cook noodles according to package directions. Drain, rinse with cold water to prevent sticking, and set aside.

  3. 3

In a small bowl, whisk together gochujang, soy sauce, rice vinegar, honey, sesame oil, half of the minced garlic, and half of the grated ginger to create the sauce.

  4. 4

Pat shrimp dry and season with salt and pepper.

  5. 5

Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the remaining minced garlic and grated ginger, stir-fry for 30 seconds until fragrant.

  6. 6

Add shrimp to the skillet and cook for 1-2 minutes per side, until just pink and starting to curl.

  7. 7

Pour the gochujang sauce over the shrimp and toss to coat. Cook for another 1-2 minutes, allowing the sauce to thicken slightly and coat the shrimp beautifully.

  8. 8

Add the roasted cherry tomatoes and cooked noodles to the skillet. Toss everything together until well combined and heated through.

  9. 9

Serve immediately, garnished with sliced green onions and sesame seeds. Optional: A sprinkle of fresh cilantro and a squeeze of lime juice will brighten the flavors further.
