Spicy Gochujang Pork Stir-Fry with Kimchi Fried Rice

- •1 tbsp soy sauce
- •1 tbsp mirin
- •1 tbsp sesame oil, divided
- •1 tbsp minced garlic
- •1 tsp grated fresh ginger
- •1 tsp sugar
- •1/2 tsp black pepper
- •1 tbsp vegetable oil
- •1 large onion, thinly sliced
- •1 red bell pepper, thinly sliced
- •1 cup chopped kimchi, plus 2 tbsp kimchi juice
- •3 cups cooked day-old white rice
- •2 large eggs, lightly beaten
- •2 green onions, chopped, for garnish
- •1 tsp toasted sesame seeds, for garnish

In a medium bowl, combine the thinly sliced pork with gochujang, soy sauce, mirin, 1/2 tbsp sesame oil, minced garlic, grated ginger, sugar, and black pepper. Mix well to coat the pork and let it marinate for at least 15 minutes while you prepare other ingredients.

Heat 1 tbsp vegetable oil in a large wok or skillet over medium-high heat. Add the marinated pork and stir-fry for 5-7 minutes, until cooked through and slightly caramelized. Remove the pork from the wok and set aside.

In the same wok, add the sliced onion and red bell pepper. Stir-fry for 3-4 minutes until slightly softened. Add the chopped kimchi and kimchi juice, and continue to stir-fry for another 2 minutes.

Add the day-old cooked rice to the wok with the vegetables and kimchi. Break up any clumps of rice and stir-fry for 5-7 minutes, ensuring the rice is heated through and slightly crispy. Make a well in the center of the rice.

Pour the lightly beaten eggs into the well. Scramble the eggs until just set, then mix them into the fried rice. Return the cooked pork to the wok and toss everything together to combine. Stir in the remaining 1/2 tbsp sesame oil.
