Instructions

  1. 1

In a medium bowl, combine gochujang, soy sauce, rice vinegar, brown sugar, garlic, ginger, and 1 tablespoon of sesame oil. Add the chicken pieces and toss to coat evenly. Let marinate for at least 15 minutes.

  2. 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the pressed tofu cubes and cook, stirring occasionally, until golden brown and crispy on all sides, about 8-10 minutes. Remove the tofu from the skillet and set aside.

  3. 3

Add the remaining 1 tablespoon of vegetable oil to the same skillet. Add the sliced onions and cook, stirring frequently, until softened and lightly caramelized, about 5-7 minutes.

  4. 4

Push the onions to one side of the skillet. Add the marinated chicken to the other side, spreading it into a single layer. Cook for 3-4 minutes without stirring to get a good sear.

  5. 5

Stir the chicken and onions together, continuing to cook until the chicken is cooked through and the sauce has thickened and coats everything beautifully, about 5-7 more minutes.

  6. 6

Return the crispy tofu to the skillet and toss gently to combine and coat with the sauce. Cook for another 1-2 minutes to heat through.

  7. 7

Remove from heat and stir in the remaining 1 tablespoon of sesame oil.

  8. 8

Serve hot, garnished with sliced green onions and sesame seeds if desired. This dish pairs wonderfully with steamed rice.
