Instructions

  1. 1

Cook linguine according to package directions until al dente. Reserve 1/2 cup pasta water before draining.

  2. 2

While pasta cooks, pat shrimp dry with paper towels and season with salt and pepper.

  3. 3

Heat olive oil in a large skillet over medium-high heat. Add minced garlic and red pepper flakes, cooking for 30 seconds until fragrant, being careful not to burn the garlic.

  4. 4

Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Remove shrimp from the skillet and set aside.

  5. 5

Add halved cherry tomatoes to the same skillet, cooking for 5-7 minutes, stirring occasionally, until they begin to burst and soften. Deglaze the pan with white wine or chicken broth, scraping up any browned bits.

  6. 6

Stir in lemon juice and the reserved pasta water. Bring to a gentle simmer. Return shrimp to the skillet and toss to combine.

  7. 7

Add the drained linguine to the skillet and toss with the shrimp and tomato sauce. Stir in fresh parsley.

  8. 8

Serve immediately, with optional grated Parmesan cheese if desired.
