Spicy Beef and Broccoli Stir-Fry with Jasmine Rice

- •1 inch fresh ginger, grated
- •1/2 cup beef broth
- •2 tbsp soy sauce
- •1 tbsp oyster sauce
- •1 tbsp rice vinegar

- •1-2 tsp chili garlic sauce (adjust to taste)

- •2 cups jasmine rice, uncooked

Cook the Jasmine Rice: In a medium saucepan, combine 2 cups jasmine rice and 4 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes before fluffing with a fork.

Prepare the Beef: In a medium bowl, toss the thinly sliced beef with 1 tablespoon cornstarch, 1 tablespoon soy sauce, and 1 teaspoon sesame oil. Set aside to marinate for at least 10 minutes while you prepare other ingredients.

Prepare the Sauce: In a small bowl, whisk together the beef broth, 2 tablespoons soy sauce, oyster sauce, rice vinegar, brown sugar, chili garlic sauce, and 1 teaspoon cornstarch until smooth. Set aside.

Stir-Fry the Broccoli: Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets and stir-fry for 3-5 minutes until bright green and slightly tender-crisp. Remove the broccoli from the skillet and set aside.

Cook the Beef and Finish Stir-Fry: Add the remaining 1 tablespoon vegetable oil to the skillet. Add the marinated beef in a single layer and cook for 2-3 minutes per side, until browned. Add the minced garlic and grated ginger, and stir-fry for 30 seconds until fragrant. Return the cooked broccoli to the skillet. Pour the prepared sauce over the beef and broccoli. Bring to a simmer and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
