Spiced Apple Cinnamon Oatmeal with Toasted Pecans

Ingredients

- •2 cups water or milk (dairy or non-dairy)
- •1 small apple, peeled, cored, and diced
- •1/2 teaspoon ground cinnamon
- •1/4 teaspoon ground nutmeg
- •Pinch of ground cloves (optional)
- •1 tablespoon maple syrup or brown sugar (or to taste)
- •1/4 cup chopped pecans
- •A dash of salt

In a small dry skillet over medium heat, toast the chopped pecans for 2-3 minutes, stirring frequently, until fragrant and lightly browned. Set aside.

In a medium saucepan, combine the rolled oats, water or milk, diced apple, cinnamon, nutmeg, cloves (if using), and a dash of salt. Bring the mixture to a boil over medium-high heat.

Once boiling, reduce the heat to low, cover, and simmer for 5-7 minutes, stirring occasionally, until the oats are tender and most of the liquid has been absorbed. If you prefer a thinner consistency, add a little more liquid.

Remove the saucepan from the heat and stir in the maple syrup or brown sugar. Taste and adjust sweetness as desired.

Divide the oatmeal into two bowls. Sprinkle the toasted pecans evenly over each serving. Serve immediately.
