Speedy Scrambled Eggs with Avocado Toast

Ingredients

  • 2 large eggs
  • 1 tablespoon milk (or water)
  • Pinch of salt
  • Pinch of black pepper
  • 1/2 ripe avocado
  • 1 slice whole-wheat bread
  • 1 teaspoon butter or olive oil
  • Optional: Red pepper flakes for garnish

    In a small bowl, whisk together the eggs, milk (or water), salt, and pepper until well combined and slightly frothy.

    Heat a small non-stick skillet over medium-low heat. Add the butter or olive oil. Once melted, pour in the egg mixture.

    As the eggs begin to set, gently push them from the edges towards the center with a spatula, allowing the uncooked egg to flow underneath. Continue this process until the eggs are mostly set but still slightly moist and fluffy (about 2-3 minutes). Remove from heat.

    While the eggs are cooking, toast the slice of bread to your desired crispness. Once toasted, mash the avocado onto the bread with a fork, spreading it evenly.

    Carefully slide the scrambled eggs onto the avocado toast. If desired, sprinkle with red pepper flakes for a touch of heat. Serve immediately.
