In a small bowl, whisk together the eggs, milk (or water), salt, and pepper until well combined and slightly frothy.

Heat a small non-stick skillet over medium-low heat. Add the butter or olive oil. Once melted, pour in the egg mixture.

As the eggs begin to set, gently push them from the edges towards the center with a spatula, allowing the uncooked egg to flow underneath. Continue this process until the eggs are mostly set but still slightly moist and fluffy (about 2-3 minutes). Remove from heat.
