Smoky Paprika Chicken Skillet with Tangy Onion Jam

Ingredients

  • •Chicken
  • •Bacon
  • •Onions
  • •Garlic
  • •Olive oil
  • •Salt
  • •Black pepper
  • •Smoked paprika
  • •Water

Instructions

  1. 1

Prepare ingredients: Pat chicken dry and season with salt, black pepper, and smoked paprika. Slice bacon into 1 cm pieces. Thinly slice onions and finely mince garlic.

  2. 2

Cook bacon: In a large skillet over medium heat, cook bacon until crispy, about 6-8 minutes. Remove bacon with a slotted spoon, reserving 1 tablespoon of rendered fat in the skillet. Set crispy bacon aside.

  3. 3

Start onion jam: Add thinly sliced onions to the skillet with bacon fat. Cook over medium-low heat for 15-20 minutes, stirring occasionally, until very soft and translucent. Add minced garlic during the last 5 minutes.

  4. 4

Develop onion jam flavor: Stir in a pinch of salt and a tablespoon of water, scraping up any browned bits from the bottom of the pan. Continue cooking until the water evaporates and onions are jam-like and deeply colored. Set aside.

  5. 5

Sear chicken: Increase heat to medium-high. Add 1 tablespoon of olive oil to the same skillet. Add seasoned chicken and sear for 3-4 minutes per side until golden brown.

  6. 6

Finish the dish: Reduce heat to medium-low. Add the onion jam back to the skillet with the chicken. Add a quarter cup of water to create a light sauce, stirring gently to combine. Cover and simmer for 5-7 minutes, or until chicken is cooked through to an internal temperature of 74 degrees Celsius and flavors have melded.

  7. 7

Serve: Transfer chicken and onion jam to plates. Garnish generously with the reserved crispy bacon pieces. Serve hot.
