Smoky Chipotle Lime Grilled Chicken Skewers

Ingredients

  • •1.5 pounds boneless, skinless chicken breast or tenderloins, cut into 1-inch cubes
  • •2 tablespoons olive oil
  • •3 tablespoons fresh lime juice
  • •1 tablespoon chipotle powder
  • •1 teaspoon smoked paprika
  • •1 teaspoon garlic powder
  • •1/2 teaspoon onion powder
  • •1/2 teaspoon ground cumin
  • •1/2 teaspoon salt
  • •1/4 teaspoon black pepper
  • •1 large red bell pepper, cut into 1-inch pieces
  • •1 large green bell pepper, cut into 1-inch pieces
  • •1 large red onion, cut into 1-inch pieces
  • •Optional: 8-10 wooden or metal skewers, soaked in water if wooden
  • •Optional: 2 tablespoons chopped fresh cilantro for garnish
  • •Optional: plain yogurt or sour cream for dipping

Instructions

  1. 1

    1. In a large bowl, combine chicken cubes, olive oil, lime juice, chipotle powder, smoked paprika, garlic powder, onion powder, ground cumin, salt, and black pepper. Toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.

  2. 2

    2. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your grill to medium-high heat, approximately 400 degrees Fahrenheit, 200 degrees Celsius.

  3. 3

    3. Thread the marinated chicken pieces alternately with red bell pepper, green bell pepper, and red onion pieces onto the skewers.

  4. 4

    4. Lightly oil the grill grates to prevent sticking. Place the skewers on the preheated grill.

  5. 5

    5. Grill for 10-14 minutes, turning every 3-4 minutes, until the chicken is cooked through and has nice grill marks, and the vegetables are tender-crisp. The internal temperature of the chicken should reach 165 degrees Fahrenheit, 74 degrees Celsius.

  6. 6

    6. Remove skewers from the grill and let them rest for a few minutes before serving. This allows the juices to redistribute, ensuring maximum tenderness.

  7. 7

    7. Arrange the Smoky Chipotle Lime Grilled Chicken Skewers on a platter. Garnish with fresh cilantro if desired. Serve hot, optionally with a side of plain yogurt or sour cream for a cooling dip.
