Ingredients
- •400g chicken thighs or drumsticks
- •3 large onions, roughly chopped
- •2 eggs
- •1 tablespoon cooking oil
- •500ml water
- •Salt, to taste
- •Black pepper, to taste
- •Optional: a few rings of raw onion for garnish
Instructions
- 1
Season the chicken pieces generously with salt and black pepper.
- 2
Heat the cooking oil in a large pot or Dutch oven over medium-high heat. Sear the chicken until golden brown on all sides, about 5-7 minutes. Remove chicken and set aside.
- 3
Add the chopped onions to the same pot, reducing heat to medium. Cook, stirring occasionally, until softened and translucent, about 5-7 minutes. Season with a pinch of salt.
- 4
Return the seared chicken to the pot with the onions. Pour in the water, ensuring the chicken is mostly submerged. Bring to a gentle simmer.
- 5
Reduce heat to low, cover the pot, and let the stew simmer for 30-35 minutes, or until the chicken is very tender and nearly falling off the bone.
- 6
While the stew finishes, bring a separate small pot of water to a gentle simmer for poaching the eggs. Carefully crack each egg into a small bowl, then gently slide them into the simmering water. Poach for 3-4 minutes until the whites are set and the yolks are still runny.
- 7
Taste the stew and adjust seasoning as needed. Ladle the hot stew into serving bowls, then carefully place one poached egg on top of each serving.
- 8
Serve immediately, optionally garnished with a few rings of raw onion for a fresh bite.
