Instructions

  1. 1

Preheat your oven to a low 250 degrees Fahrenheit, 120 degrees Celsius.

  2. 2

Carefully separate the garlic cloves from the heads, peeling each one to remove the papery skin. There is no need to mince or crush them.

  3. 3

Place all the peeled garlic cloves into a small, oven-safe saucepan or baking dish.

  4. 4

Pour the olive oil over the garlic, ensuring all the cloves are fully submerged. Add the salt, black pepper, red chili flakes, and dried oregano to the oil.

  5. 5

Transfer the dish to the preheated oven and slow-roast for 60 to 75 minutes, or until the garlic cloves are golden brown, very soft, and easily pierced with a fork. Do not let the garlic brown too much, as it can become bitter.

  6. 6

Carefully remove the confit from the oven and let it cool completely in the oil. The garlic will continue to soften slightly as it cools.

  7. 7

Once cooled, transfer the garlic cloves and the infused oil to a clean, airtight jar. This confit is best stored in the refrigerator and used within two weeks.
