Instructions

  1. 1

Pat the chicken thighs dry with paper towels, especially the skin, to promote crispness during browning.

  2. 2

Season both sides of the chicken thighs generously with salt and black pepper.

  3. 3

Heat the olive oil in a heavy-bottomed pot or Dutch oven over medium-high heat until shimmering.

  4. 4

Carefully place the chicken thighs skin-side down in the hot pot and sear for 6-8 minutes until the skin is deeply golden brown and crispy. Flip and sear the other side for 3-4 minutes.

  5. 5

Remove the chicken from the pot and set aside. Deglaze the pot by pouring in 50 ml of water, scraping up any browned bits from the bottom with a wooden spoon, which will form the foundation of your rich sauce.

  6. 6

Return the chicken thighs to the pot, skin-side up. Add the remaining 200 ml of water, dried thyme, dried rosemary, and the bay leaf. Bring to a gentle simmer.

  7. 7

Reduce the heat to low, cover the pot, and let it slow cook for 45-50 minutes, or until the chicken is incredibly tender and easily pulls from the bone.

  8. 8

Remove the chicken from the pot. Increase the heat to medium-high and reduce the pan sauce for 5-7 minutes, stirring occasionally, until it thickens slightly to a desired consistency.

  9. 9

Serve the tender chicken with the rich pan sauce spooned over, optionally garnished with a sprinkle of fresh black pepper.
