Ingredients
- •6 bone-in, skin-on chicken thighs and drumsticks
- •4 ounces thick-cut bacon, cut into 1/2-inch pieces
- •1 tablespoon olive oil
- •1 large onion, chopped
- •2 carrots, peeled and chopped
- •2 celery stalks, chopped
- •8 ounces cremini mushrooms, quartered
- •2 cloves garlic, minced
- •1 1/2 cups dry white wine, such as Chardonnay or Pinot Grigio
- •1 cup chicken broth
- •1 bay leaf
- •1 sprig fresh thyme
- •1 sprig fresh rosemary
- •1 cup frozen pearl onions, thawed
- •2 tablespoons all-purpose flour
- •2 tablespoons unsalted butter, softened
- •Salt and black pepper to taste
- •Optional: Fresh parsley, chopped, for garnish
Instructions
- 1
Pat chicken pieces very dry and season generously with salt and pepper. In a large Dutch oven or heavy-bottomed pot, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving rendered fat in the pot.
- 2
Increase heat to medium-high. Add chicken pieces to the pot, skin-side down, and sear for 5-7 minutes per side until deeply golden brown. Remove chicken and set aside.
- 3
Reduce heat to medium. If needed, add 1 tablespoon olive oil to the pot. Add chopped onion, carrots, and celery. Cook, stirring occasionally, for 8-10 minutes until softened.
- 4
Add mushrooms and minced garlic to the pot. Cook for another 5-7 minutes until mushrooms are browned and tender. Stir in the flour and cook for 1 minute.
- 5
Pour in the white wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer and cook for 2-3 minutes until slightly reduced. Stir in the chicken broth, bay leaf, thyme, and rosemary.
- 6
Return the seared chicken pieces to the pot, nestling them into the liquid. Bring to a gentle simmer, then cover and reduce heat to low. Braise for 45-60 minutes, or until chicken is very tender.
- 7
Stir in the thawed pearl onions and cooked bacon. Continue to simmer, uncovered, for another 15-20 minutes, allowing the sauce to thicken slightly and flavors to meld.
- 8
Remove bay leaf, thyme, and rosemary sprigs. Taste and adjust seasoning. If a thicker sauce is desired, mash the softened butter with 2 tablespoons of flour to create a beurre manié, then whisk small pieces into the simmering sauce until desired consistency is reached. Serve hot, optionally garnished with fresh chopped parsley.
