Instructions

  1. 1

Pat the beef dry with paper towels and season generously with salt and pepper.

  2. 2

Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides, then remove and set aside.

  3. 3

Add the diced bacon to the pot and cook until crispy. Remove bacon with a slotted spoon, leaving the rendered fat in the pot.

  4. 4

Add the chopped onion to the pot and cook until softened and translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.

  5. 5

Return the seared beef to the pot. Stir in the crushed tomatoes, water, dried thyme, and bay leaf. Bring the mixture to a simmer.

  6. 6

Reduce the heat to low, cover the pot tightly, and let it braise for at least 2.5 to 3 hours, or until the beef is incredibly tender. Stir occasionally to prevent sticking.

  7. 7

Remove the bay leaf. Taste and adjust seasoning with salt and pepper as needed.

  8. 8

Serve hot, garnished with the crispy bacon bits.
