Slow-Braised Beef with Rich Garlic and Onion Gravy

Ingredients

  • •Beef chuck roast, cut into 2-inch pieces
  • •Bacon
  • •Onions
  • •Garlic
  • •Olive oil
  • •Salt
  • •Black pepper
  • •Water

Instructions

  1. 1

Season the beef pieces generously with salt and black pepper.

  2. 2

In a large Dutch oven or oven-safe pot, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set aside, reserving the rendered fat in the pot.

  3. 3

Add a tablespoon of olive oil to the pot if needed. Increase heat to medium-high and sear the beef pieces in batches until deeply browned on all sides. Remove beef and set aside.

  4. 4

Reduce heat to medium. Add sliced onions to the pot and cook until softened and translucent, about 5-7 minutes. Add minced garlic and cook for another 1 minute until fragrant.

  5. 5

Return the seared beef to the pot. Pour in enough water to almost cover the beef. Bring to a simmer, then reduce heat to low, cover, and braise in the oven at 160 degrees Celsius for 2 to 2.5 hours, or until the beef is fork-tender.

  6. 6

Once the beef is tender, remove it from the pot. If the gravy is too thin, simmer uncovered on the stovetop over medium-high heat until it reaches your desired consistency, stirring occasionally.

  7. 7

Return the beef to the gravy. Serve hot, garnished with the crispy crumbled bacon.
