Simple Beef and Broccoli Stir-fry with White Rice

Simple Beef and Broccoli Stir-fry with White Rice

Ingredients

  • 1 pound flank steak or sirloin, thinly sliced against the grain
  • 1 head broccoli, cut into bite-sized florets
  • 2 tablespoons soy sauce, plus more for sauce
  • 1 tablespoon cornstarch, plus more for sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated (about 1 tablespoon)
  • 1/2 cup beef broth
  • 2 tablespoons oyster sauce (optional, for richer flavor)
  • 1 tablespoon brown sugar
  • 1 teaspoon rice vinegar
  • 3 cups cooked white rice, for serving

    In a medium bowl, combine the thinly sliced beef with 2 tablespoons soy sauce and 1 tablespoon cornstarch. Toss to coat evenly and set aside to marinate for at least 10 minutes.

    Prepare the stir-fry sauce: In a small bowl, whisk together the beef broth, remaining 2 tablespoons soy sauce, oyster sauce (if using), brown sugar, rice vinegar, and 1 teaspoon cornstarch. Set aside.

    Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets and stir-fry for 3-5 minutes until tender-crisp. Remove the broccoli from the skillet and set aside.

    Add the remaining 1 tablespoon vegetable oil to the skillet. Add the marinated beef in a single layer and cook for 2-3 minutes per side until browned. You may need to do this in batches to avoid overcrowding the pan. Remove the beef from the skillet and set aside with the broccoli.

    Reduce heat to medium. Add the minced garlic and grated ginger to the skillet and stir-fry for 30 seconds until fragrant. Pour in the prepared stir-fry sauce and bring to a simmer, stirring constantly until the sauce thickens, about 1-2 minutes.

    Return the cooked beef and broccoli to the skillet with the sauce. Toss gently to coat everything evenly and cook for another 1-2 minutes until heated through. Stir in the sesame oil.
