Simple Beef and Broccoli Stir-Fry with White Rice

Ingredients

  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 cups fresh broccoli florets
  • 1 tbsp vegetable oil (for stir-frying)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 cup beef broth
  • 2 tbsp soy sauce (for sauce)
  • 1 tbsp oyster sauce (optional, for richer flavor)
  • 1 tbsp brown sugar
  • 1 tsp cornstarch (for sauce)
  • 1/4 cup water (for cornstarch slurry)
  • 3 cups cooked white rice, for serving

    In a medium bowl, combine the thinly sliced beef with 1 tablespoon cornstarch, 1 tablespoon soy sauce, and 1 teaspoon sesame oil. Toss to coat evenly and set aside to marinate for at least 10 minutes while you prepare other ingredients.

    In a small bowl, whisk together the beef broth, 2 tablespoons soy sauce, oyster sauce (if using), brown sugar, and 1 teaspoon cornstarch dissolved in 1/4 cup water. This is your stir-fry sauce. Set aside.

    Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and cook for 2-3 minutes per side, until browned. Do not overcrowd the pan; cook in batches if necessary. Remove the cooked beef from the skillet and set aside.

    Add the broccoli florets to the same skillet. Stir-fry for 3-5 minutes until bright green and slightly tender-crisp. Add the minced garlic and grated ginger and cook for another minute until fragrant.

    Return the cooked beef to the skillet with the broccoli. Give the prepared stir-fry sauce a quick whisk and pour it over the beef and broccoli. Bring to a simmer, stirring constantly, until the sauce thickens and coats the ingredients, about 1-2 minutes.
