Sheet Pan Sausage and Peppers with Onions and Zucchini

Ingredients

  • 1 pound Italian sausage (sweet or hot), cut into 1-inch pieces
  • 2 bell peppers (any color, e.g., red and yellow), cored and cut into 1-inch strips
  • 1 medium red onion, cut into 1-inch wedges
  • 1 medium zucchini, trimmed and cut into 1/2-inch thick half-moons
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Pinch of salt (optional, as sausage can be salty)

Instructions

    Preheat your oven to 4000F (2000C). Line a large baking sheet with parchment paper for easier cleanup.

    In a large bowl, combine the cut sausage, bell peppers, red onion, and zucchini.

    Drizzle the olive oil over the ingredients in the bowl. Sprinkle with dried oregano, garlic powder, and black pepper. Add a pinch of salt if desired. Toss everything together until the vegetables and sausage are evenly coated.

    Spread the mixture in a single layer on the prepared baking sheet. Ensure there's enough space so the ingredients can roast and not steam.

    Bake for 20-25 minutes, or until the sausage is cooked through and the vegetables are tender-crisp and slightly caramelized. Halfway through cooking (around 10-12 minutes), carefully remove the baking sheet from the oven and give the ingredients a good stir to ensure even cooking.
