Ingredients
- •200g pasta, spaghetti or linguine preferred
- •1 can (150g) tuna in oil, drained and pressed into two small patties
- •2 large tomatoes, finely diced
- •150g mushrooms, sliced
- •2 tablespoons olive oil, divided
- •Salt to taste
- •Pepper to taste
- •Optional: a pinch of garlic powder for seasoning
Instructions
- 1
Cook the pasta according to package directions until al dente, about 8-10 minutes. Reserve about 50ml of pasta water before draining.
- 2
While the pasta cooks, heat 1 tablespoon of olive oil in a non-stick pan over medium-high heat. Season the tuna patties with salt and pepper.
- 3
Sear the tuna patties for 2-3 minutes per side until lightly golden and heated through. Remove from the pan and set aside.
- 4
In the same pan, add the remaining 1 tablespoon of olive oil. Add the sliced mushrooms and sauté for 5-7 minutes until tender and browned.
- 5
Add the finely diced tomatoes to the pan with the mushrooms. Cook for 3-5 minutes, stirring occasionally, until the tomatoes soften and release their juices, forming a light sauce. Season with salt and pepper.
- 6
Add the drained pasta to the pan with the tomato and mushroom sauce. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it.
- 7
Gently flake the seared tuna into the pasta, stirring to combine.
- 8
Serve immediately, ensuring each plate has a good mix of pasta, tuna, and sauce.
