Seared Shrimp with Sun-Kissed Tomato Confit and Herbed Couscous

Ingredients

  • •1 pound large shrimp, peeled and deveined
  • •1 pint cherry tomatoes
  • •1/4 cup plus 2 tablespoons olive oil
  • •3 cloves garlic, minced
  • •1 tablespoon fresh thyme, chopped
  • •1 teaspoon fresh oregano, chopped
  • •1/4 teaspoon red pepper flakes (optional)
  • •1 cup vegetable broth
  • •1 cup couscous
  • •2 tablespoons fresh parsley, chopped
  • •1/2 lemon, juiced
  • •Salt and freshly ground black pepper to taste
  • •Optional: Fresh basil leaves for garnish
  • •Optional: Feta cheese, crumbled for serving

Instructions

  1. 1

Prepare the tomato confit. Preheat oven to 300°F. Toss cherry tomatoes with 1/4 cup olive oil, 2 minced garlic cloves, thyme, oregano, red pepper flakes (if using), salt, and pepper on a baking sheet. Roast for 45-60 minutes, or until tomatoes are softened and slightly caramelized, stirring halfway through.

  2. 2

While tomatoes roast, prepare the couscous. Bring vegetable broth to a boil in a small saucepan. Add couscous, stir, cover, and remove from heat. Let stand for 5 minutes, then fluff with a fork. Stir in chopped parsley, a drizzle of olive oil, salt, and pepper.

  3. 3

Pat shrimp dry with paper towels. Season with salt and pepper.

  4. 4

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the remaining minced garlic clove and cook for 30 seconds until fragrant.

  5. 5

Add shrimp to the skillet in a single layer. Sear for 1-2 minutes per side, until pink and opaque. Do not overcrowd the pan, cook in batches if necessary.

  6. 6

Remove shrimp from heat. Stir in lemon juice.

  7. 7

To serve, spoon couscous onto plates. Top with seared shrimp and a generous portion of the warm tomato confit.

  8. 8

Optional: Garnish with fresh basil leaves and crumbled feta cheese for an extra layer of flavor and texture.
