Instructions

  1. 1

In a large skillet, heat 1 tbsp olive oil over medium heat. Add onion and cook until softened. Add garlic and cook for 1 minute, then stir in rice and cook for 1-2 minutes until lightly toasted.

  2. 2

Deglaze the pan with white wine and cook until mostly evaporated. Add broth, 1/2 cup at a time, stirring continuously and waiting until almost fully absorbed before adding more. This should take about 25-30 minutes. When done, the risotto should be creamy and al dente.

  3. 3

While the risotto cooks, heat 1 tbsp olive oil in a separate skillet over medium-high heat. Season shrimp with lemon zest, paprika, salt, and pepper. Sear for 1-2 minutes per side until cooked through and slightly charred. Set aside.

  4. 4

Stir in butter, mushrooms, and garlic confit into the risotto. Cook for 5 minutes until mushrooms are tender. Fold in Parmesan, taste and adjust seasoning as needed. Serve the risotto topped with seared shrimp, fresh thyme, lemon zest, and additional Parmesan.

  5. 5

Optional: drizzle with garlic confit oil for added richness.
