This seared beef dish is a study in elegant simplicity, showcasing the beautiful contrast between perfectly cooked meat and a rich, sweet confit. It is exquisitely complemented by the sweet onion and roasted garlic confit, a slow-cooked blend that melts in your mouth, releasing its deep, caramelized essence. This dish elevates humble ingredients into a restaurant-worthy experience, delivering a harmonious balance of textures and a profound umami flavor that lingers delightfully on the palate.

Seared Beef with Sweet Onion and Roasted Garlic Confit

Ingredients

  • •300 grams beef sirloin or tenderloin, cut into 2 steaks
  • •2 medium onions, thinly sliced
  • •6 cloves garlic, peeled and left whole
  • •4 tablespoons olive oil
  • •1 sprig fresh rosemary
  • •1 small tomato, finely diced (optional, for color)
  • •Salt to taste
  • •Black pepper to taste

Instructions

  1. 1

To make the confit, combine the thinly sliced onions, whole garlic cloves, and 3 tablespoons of olive oil in a small saucepan. Cook over very low heat for 20-25 minutes, stirring occasionally, until the onions are deeply caramelized and the garlic is soft and golden. Season with a pinch of salt and pepper.

  2. 2

While the confit cooks, pat the beef steaks dry with paper towels and season generously on both sides with salt and black pepper.

  3. 3

Heat the remaining 1 tablespoon of olive oil in a cast-iron skillet or heavy-bottomed pan over high heat until shimmering. Add the beef steaks and the sprig of rosemary.

  4. 4

Sear the steaks for 3-4 minutes per side for medium-rare, or adjust cooking time to your desired doneness. For a perfect crust, avoid moving the steaks too much during searing.

  5. 5

Remove the steaks from the skillet and let them rest on a cutting board for 5 minutes. Resting allows the juices to redistribute, ensuring a tender and flavorful bite.

  6. 6

Once rested, slice the beef against the grain into thick slices. Stir the finely diced tomato into the onion and garlic confit, if using, for a touch of freshness and color.

  7. 7

To serve, spoon a generous amount of the sweet onion and roasted garlic confit onto plates. Arrange the sliced seared beef artfully on top of the confit, creating an inviting presentation.
