Seared Bacon Wrapped Onion and Tomato Bundles with Silky Poached Eggs

Ingredients

  • •6 strips Bacon
  • •1 large Onion, cut into 6 wedges
  • •2 medium Tomatoes, cut into 6 wedges
  • •4 large Eggs
  • •1 tablespoon Olive Oil
  • •Water, for poaching
  • •Salt, to taste
  • •Black Pepper, to taste

Instructions

  1. 1

Step 1: Prepare the bacon bundles. Take one wedge of onion and one wedge of tomato, then wrap them tightly together with a strip of bacon. Secure with a toothpick if needed. Repeat for all 6 bundles.

  2. 2

Step 2: Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Carefully place the bacon-wrapped bundles into the hot skillet.

  3. 3

Step 3: Sear the bundles for 3-4 minutes on each side, turning frequently, until the bacon is crispy and golden brown on all sides and the vegetables are tender-crisp. Remove from the skillet and keep warm.

  4. 4

Step 4: While the bundles are searing, prepare the poached eggs. Fill a medium saucepan with about 5-7 centimeters of water. Bring the water to a gentle simmer, ensuring it is not boiling vigorously.

  5. 5

Step 5: Crack each egg into a separate small bowl or ramekin. Carefully slide the eggs one at a time into the simmering water.

  6. 6

Step 6: Poach the eggs for 3-4 minutes for a runny yolk, or longer for a firmer yolk. Use a slotted spoon to carefully remove the poached eggs from the water.

  7. 7

Step 7: Season the poached eggs with a pinch of salt and black pepper.

  8. 8

Step 8: Arrange three bacon-wrapped bundles on each serving plate. Carefully place a poached egg on top of or alongside the bundles. Serve immediately.
