Ingredients
- •2 medium potatoes, about 300g
- •2 large onions
- •2 cloves garlic
- •2 large eggs
- •2 tablespoons olive oil
- •1/2 teaspoon salt, plus more to taste
- •1/4 teaspoon black pepper, plus more to taste
- •1/2 cup water (for steaming/baking potatoes)
Instructions
- 1
Preheat your oven to 190 degrees Celsius (375 degrees Fahrenheit). Peel and thinly slice the potatoes into 2mm thick rounds. Peel and thinly slice the onions. Mince the garlic cloves.
- 2
Heat 1 tablespoon of olive oil in a large skillet over medium-low heat. Add the sliced onions and cook very slowly, stirring occasionally, for 20-25 minutes until they are deeply golden brown and caramelized. This slow cooking develops their natural sweetness. Add the minced garlic during the last 5 minutes of caramelization.
- 3
In a medium bowl, toss the sliced potatoes with 1 tablespoon of olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated.
- 4
Grease a small oven-safe gratin dish or two individual ramekins. Arrange half of the seasoned potato slices in an even layer at the bottom of the dish. Spread half of the caramelized onions over the potatoes.
- 5
Repeat with the remaining potato slices and caramelized onions, creating a second layer. Pour 1/2 cup of water over the layers. This will help steam the potatoes to tenderness.
- 6
Cover the gratin dish tightly with foil and bake for 25 minutes. This initial baking steams the potatoes, ensuring they become tender.
- 7
Remove the foil. Carefully create two small wells in the gratin. Crack one egg into each well. Return the gratin to the oven, uncovered, and bake for an additional 10-15 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
- 8
Remove from the oven and let rest for a few minutes before serving. The rich flavors of the potatoes and sweet onions, combined with the creamy baked eggs, create a truly memorable and satisfying dish.
