Savory Ham and Cheddar Egg Muffins

Ingredients

  • 6 large eggs
  • 1/4 cup milk (any kind)
  • 1/4 cup diced cooked ham
  • 1/4 cup shredded sharp cheddar cheese
  • 1 tablespoon chopped fresh chives (optional)
  • Salt and black pepper to taste
  • Cooking spray or butter for muffin tin

Instructions

    Preheat your oven to 350°F (175°C). Lightly grease a 6-cup muffin tin with cooking spray or butter.

    In a medium bowl, whisk the eggs and milk together until well combined and slightly frothy. Season with salt and black pepper.

    Stir in the diced ham, shredded cheddar cheese, and chopped chives (if using) into the egg mixture.

    Carefully pour the egg mixture evenly into the prepared muffin cups, filling each about two-thirds full.

    Bake for 15-18 minutes, or until the egg muffins are set, puffed, and lightly golden brown around the edges. A knife inserted into the center should come out clean.

    Remove the muffin tin from the oven and let the egg muffins cool in the tin for a few minutes before carefully removing them. Serve warm or at room temperature.
