Instructions
- 1
In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.
- 2
Heat the butter in a non-stick skillet over medium-low heat. Once the butter is melted and shimmering, pour in the egg mixture.
- 3
As the eggs begin to set, gently push the cooked portions from the edges towards the center with a spatula. Continue to cook, folding and stirring gently, until the eggs are mostly set but still slightly moist. Do not overcook.
- 4
Warm the tortillas: You can do this in a dry skillet over medium heat for about 15-20 seconds per side, in the microwave for 15-20 seconds, or wrapped in foil in an oven for a few minutes. This makes them more pliable.
- 5
Assemble the burritos: Lay each warm tortilla flat. Divide the scrambled eggs evenly between the two tortillas, placing them slightly below the center. Sprinkle half of the shredded cheese over the eggs on each tortilla. If using, add salsa and cooked breakfast sausage/bacon bits.
- 6
To fold, first fold in the sides of the tortilla over the filling, then fold up the bottom edge tightly over the filling. Roll the burrito upwards from the bottom until it's a neat, compact cylinder. Serve immediately.
