Rustic Braised Chicken with Tomato and Garlic Sauce

Ingredients

  • •2 boneless, skinless chicken thighs
  • •2 large tomatoes, chopped
  • •4 cloves garlic, minced
  • •1 small onion, diced
  • •15 ml olive oil
  • •5 grams dried oregano
  • •Salt to taste
  • •Black pepper to taste
  • •Optional: Fresh basil leaves for garnish

Instructions

  1. 1

Pat chicken thighs dry and season generously with salt and black pepper.

  2. 2

Heat olive oil in a large skillet or pan over medium-high heat. Sear chicken thighs for 4-5 minutes per side, until golden brown. Remove chicken from the pan and set aside.

  3. 3

Add diced onion to the same pan and cook for 3-4 minutes until softened. Add minced garlic and dried oregano, cooking for another minute until fragrant.

  4. 4

Stir in the chopped tomatoes, a pinch more salt, and pepper. Bring to a simmer, scraping up any browned bits from the bottom of the pan.

  5. 5

Return the seared chicken thighs to the pan, nestling them into the tomato sauce. Reduce heat to low, cover, and simmer for 20-25 minutes, or until chicken is cooked through and tender.

  6. 6

Taste the sauce and adjust seasoning if needed. Serve hot, optionally garnished with fresh basil leaves.

  7. 7

This dish pairs wonderfully with a simple side of rice or crusty bread to soak up the delicious sauce.
