Instructions

  1. 1

Pat the beef cubes dry with paper towels and season generously with salt and pepper.

  2. 2

Heat olive oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Sear the beef in batches until deeply browned on all sides, about 3-4 minutes per batch. Remove beef and set aside.

  3. 3

Add chopped onion to the pot, reducing heat to medium. Cook, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes. Add minced garlic and cook for another 1 minute until fragrant.

  4. 4

Return the seared beef to the pot. Stir in the diced tomatoes and water. Bring the mixture to a gentle simmer, scraping any browned bits from the bottom of the pot.

  5. 5

Reduce heat to low, cover the pot tightly, and braise for at least 2 hours, or until the beef is fork-tender. Stir occasionally to prevent sticking.

  6. 6

Remove the lid for the last 30 minutes of cooking to allow the sauce to thicken slightly. Taste and adjust seasoning with salt and pepper as needed.

  7. 7

Serve hot, ensuring each portion gets plenty of the rich, savory sauce.
