Instructions

  1. 1

Preheat your oven to 190 degrees Celsius. Pat the beef roast dry with paper towels.

  2. 2

In a small bowl, combine the olive oil, salt, black pepper, and leaves from one sprig of rosemary. Rub this mixture all over the beef roast, ensuring it is well coated.

  3. 3

Arrange the onion wedges and smashed garlic cloves in a small roasting pan. Place the seasoned beef roast in the center of the pan, nestled among the onions and garlic. Add the remaining rosemary sprig to the pan.

  4. 4

Pour the 100 ml of water into the bottom of the roasting pan. This will help create steam and keep the beef moist while preventing the pan drippings from burning.

  5. 5

Roast for 45-60 minutes for medium-rare, or until an internal temperature of 57-60 degrees Celsius is reached for medium-rare. Adjust roasting time for desired doneness, basting occasionally with the pan juices.

  6. 6

Once cooked to your preference, remove the roast from the oven and transfer it to a cutting board. Tent loosely with foil and let it rest for at least 10-15 minutes. Resting allows the juices to redistribute, ensuring a tender and moist roast.

  7. 7

While the beef rests, you can return the onions and garlic to the oven for an additional 5-10 minutes if they need further caramelization, or keep them warm.

  8. 8

Slice the rested beef against the grain into thick pieces. Serve immediately with the roasted, garlic-infused onions and any pan juices drizzled over. A final grind of fresh black pepper can be added for extra aroma.
