Quick Scrambled Eggs with Crispy Bacon Bits

Ingredients

  • 4 large eggs
  • 2 tablespoons milk (or cream for extra richness)
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 4 slices bacon
  • 1 tablespoon unsalted butter (or cooking oil)
  • Optional: Fresh chives, chopped, for garnish

    In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy. Set aside.

    Place the bacon slices in a cold non-stick skillet over medium heat. Cook for 5-7 minutes, flipping occasionally, until crispy. Remove bacon from the skillet, place on a paper towel-lined plate to drain excess fat, then crumble into small bits.

    Carefully pour off most of the bacon fat from the skillet, leaving about 1 teaspoon. Add the butter (or cooking oil) to the skillet and melt over medium-low heat.

    Pour the egg mixture into the skillet. Let it sit undisturbed for about 30 seconds until the edges begin to set.

    Using a spatula, gently push the cooked egg from the edges towards the center of the skillet, tilting the pan to allow uncooked egg to flow underneath. Continue to cook and gently fold the eggs until they are mostly set but still slightly moist and creamy.

    Remove the skillet from the heat immediately to prevent overcooking. Stir in the crispy bacon bits. Serve hot, garnished with fresh chives if desired.
