In a medium bowl, whisk together the eggs, milk (or cream), salt, and pepper until well combined and slightly frothy.

Heat the butter in a non-stick skillet over medium-low heat until melted and shimmering.

Pour the egg mixture into the hot skillet. Let it sit undisturbed for about 30 seconds until the edges just begin to set.

Using a rubber spatula, gently push the cooked egg from the edges towards the center of the skillet, tilting the pan to allow uncooked egg to flow underneath.
