Quick Scrambled Eggs with Cheddar and Chives

Ingredients

  • 4 large eggs
  • 2 tablespoons milk (or cream for richer eggs)
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 1 tablespoon unsalted butter
  • 1/4 cup shredded sharp cheddar cheese
  • 1 tablespoon fresh chives, finely chopped

    In a medium bowl, whisk together the eggs, milk (or cream), salt, and pepper until well combined and slightly frothy.

    Heat the butter in a non-stick skillet over medium-low heat until melted and shimmering.

    Pour the egg mixture into the hot skillet. Let it sit undisturbed for about 30 seconds until the edges just begin to set.

    Using a rubber spatula, gently push the cooked egg from the edges towards the center of the skillet, tilting the pan to allow uncooked egg to flow underneath.

    Continue to gently push and fold the eggs until they are mostly set but still slightly moist and creamy. This should take about 2-3 minutes.

    Remove the skillet from the heat. Stir in the shredded cheddar cheese and chopped chives until the cheese is melted and the chives are incorporated.
