Instructions

  1. 1

In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined. Set aside.

  2. 2

Heat the olive oil in a large non-stick skillet over medium heat. Add the diced chicken sausage and chopped onion. Cook for 3-5 minutes, stirring occasionally, until the onion is softened and the sausage is lightly browned.

  3. 3

Pour the egg mixture into the skillet with the sausage and onions. Cook, stirring gently with a spatula, until the eggs are set but still moist and fluffy, about 3-4 minutes.

  4. 4

Remove the skillet from the heat. Stir in the shredded cheddar cheese until just melted.

  5. 5

Warm the tortillas according to package directions (microwave for 15-20 seconds each, or briefly heat in a dry skillet).

  6. 6

Lay each warm tortilla flat. Spoon an equal portion of the egg and sausage mixture onto the center of each tortilla. If desired, add a spoonful of salsa and a sprinkle of cilantro.

  7. 7

Fold in the sides of the tortilla, then tightly roll it up from the bottom to create a burrito. Serve immediately.
