Instructions

  1. 1

Heat olive oil in a large non-stick skillet or griddle over medium heat.

  2. 2

Add the cooked chicken to the skillet along with chili powder, cumin, salt, and pepper. Sauté for 2-3 minutes until heated through and spices are fragrant.

  3. 3

Place one tortilla in the skillet. Sprinkle half of the shredded cheese evenly over one half of the tortilla. Top with half of the seasoned chicken, and if using, half of the chopped red onion and bell pepper.

  4. 4

Fold the other half of the tortilla over the filling to create a half-moon shape. Cook for 3-4 minutes per side, or until the tortilla is golden brown and the cheese is melted and bubbly. Press down gently with a spatula to help it cook evenly.

  5. 5

Remove the quesadilla from the skillet and repeat the process with the remaining ingredients for the second quesadilla. Slice each quesadilla into wedges.

  6. 6

Serve immediately with a side of salsa and a dollop of sour cream or Greek yogurt, if desired.
