Instructions
- 1
In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined. Do not overbeat.
- 2
Heat the butter or oil in a non-stick skillet over medium-low heat. Once the butter is melted and shimmering, pour in the egg mixture.
- 3
As the eggs begin to set on the bottom, gently push the cooked portions towards the center with a spatula, allowing the uncooked egg to flow underneath. Continue cooking and gently folding until the eggs are mostly set but still slightly moist.
- 4
While the eggs are cooking, warm the tortillas. You can do this by heating them in a dry skillet for 15-30 seconds per side, microwaving them for 15-20 seconds, or wrapping them in foil and placing them in a warm oven for a few minutes.
- 5
Once the eggs are cooked, remove the skillet from the heat. Lay a warm tortilla flat. Spoon half of the scrambled eggs onto the center of each tortilla. Sprinkle half of the shredded cheese over the eggs. If using, add salsa and/or breakfast meat.
- 6
To roll the burrito, fold in the sides of the tortilla over the filling, then fold up the bottom edge tightly over the filling. Roll the burrito away from you until it's completely enclosed. Repeat with the second burrito. Serve immediately.
