Quick Beef and Broccoli Stir-Fry with White Rice

Ingredients

  • 1 pound flank steak or sirloin, thinly sliced against the grain
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil, divided
  • 4 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce (optional, for richer flavor)
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch (for sauce)
  • 1/4 teaspoon black pepper
  • 2 cups uncooked white rice
  • 4 cups water (for rice)

    Prepare the rice: Rinse the white rice thoroughly. In a medium saucepan, combine the rinsed rice and 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until all water is absorbed and rice is tender. Keep covered off the heat until ready to serve.

    Marinate the beef: In a medium bowl, combine the thinly sliced beef with 1 tablespoon cornstarch, 1 tablespoon soy sauce, and 1 tablespoon sesame oil. Toss to coat evenly and set aside for at least 10 minutes while you prepare other ingredients.

    Prepare the sauce: In a small bowl, whisk together the beef broth, 1/4 cup soy sauce, oyster sauce (if using), brown sugar, 1 teaspoon cornstarch, and black pepper until smooth. Set aside.

    Cook the beef and broccoli: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and stir-fry for 2-3 minutes until browned. Remove the beef from the skillet and set aside.

    Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the broccoli florets and stir-fry for 3-5 minutes until bright green and slightly tender-crisp. Add the minced garlic and grated ginger and stir-fry for another minute until fragrant.

    Combine and finish: Return the cooked beef to the skillet with the broccoli. Give the prepared sauce a quick whisk and pour it over the beef and broccoli. Stir constantly for 1-2 minutes until the sauce thickens and coats everything. Remove from heat.
